Being a single woman, I realized that I needed easy dinner meals since I typically found myself arriving home from work to stare at a take out menu. The honest truth is I hate cooking dinner on weeknights because it creates leftovers especially for one person.
My usual solution was to eat one portion in the evening and take another portion to work for lunch the next day. But, the remaining leftovers would take up space in my fridge for far too long and then have to be thrown out along with the food storage containers!
So, I decided to search for dinner recipes that were for one person and didn’t force me to store leftovers.
It was the best decision that I could have made and really calmed down my anxiety on wasting food. Oddly, I found myself pretty happy while cooking my single serve meals. I guess I gained a little more passion for cooking through it all.

- Four Ingredient Single Serve Pizza or Dessert Pizza (Jo and Sue) I was so excited when I saw this one. A recipe that can serve up the best of both worlds when needed! I love pizza and I have a very special place in my heart for dessert pizza.
